Recipe of White Lobia/ Safed Lobia

Ingredients:

 

  • 2 cups of dried white lobia
  • 4 cups of water
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon of cumin powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 2 tablespoons of chopped fresh parsley (optional)

Instructions:

  • Rinse the white lobia in cold water and soak them overnight in a large bowl with enough water to cover the beans by a few inches. Drain the soaking water and rinse the beans again before cooking.
  • In a large pot, heat the olive oil over medium-high heat. Add the chopped onion and minced garlic and cook until the onion is translucent, about 5 minutes.
  • Add the cumin powder and paprika to the pot and stir to combine.
  • Add the soaked white lobia and 4 cups of water to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 1-2 hours, or until the beans are tender.
